We just can’t get enough of it.  Ground beef, taco seasoning, black beans, chili beans, Rotel, corn, taco seasoning, Mexican Velveeta, and frozen hashbrowns. This flavorful soup is very simple to make, yet super delicious. Its creaminess and smooth texture will make you want another bowl.

How to Make Creamy Taco Soup

This soup is effortless to make with only a few simple ingredients. In a large skillet, cook ground beef over medium-high heat until crumbled and no longer pink. Drain excess grease. Add a packet of taco seasoning and water to the skillet. Cook for 5 minutes. Place taco meat in a slow cooker. Add Rotel diced tomatoes and green chiles, black beans, corn kernels, Mexican Velveeta cheese, beef broth, and frozen hash browns. Stir to combine. Cover the crock pot and cook on LOW for 6 to 8 hours.

  • 1 (1-oz) packet taco seasoning
  • ½ cup water
  • 1 (10-oz) can Rotel diced tomatoes and green chilies, undrained
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (15-oz) can chili beans, undrained
  • 1 (15-oz) corn kernels, drained
