Eggs are a nutritional powerhouse, plain and simple. However, if you’re getting bored of your typical hard-boiled eggs, some cheese will always help to spice things up.
Cheese and eggs are a great combination and are always tasty when paired together in a dish.
Here are two of my favourite egg and cheese recipes, that you won’t want to miss out on:
Egg-Topped Avocado and Cheese Sandwich
Avocado is one of the healthiest fruits and, cheese and eggs are also a great source of protein. So, egg-topped avocado and cheese toast makes for a healthy breakfast. This amazing breakfast doesn’t use any fancy ingredients and takes no time at all to prepare, it’ll be on your plate before you know it.
To make egg-topped avocado and cheese sandwich, you will need brown bread, avocados, cheese slices, tomatoes, red onion, bacon and salt & pepper.
Start with toasting your bread, and while it is inside the toaster, mash the avocado with salt and pepper, then set it aside. Then cook your egg however you prefer. I prefer sunny side up – It is completely your choice. Now it’s time to grill the bacon, then cut your red onion into rings and tomatoes into slices.
Assembly time – take a slice of bread and spread avocado mash evenly on top. Then top with tomato, onion, egg, bacon and a cheese slice. Finally, finish your masterpiece with another piece of bread and enjoy.
Cheese and Broccoli Frittata
Frittata is an egg-based Italian dish that makes for an impressive, rich brunch. It is a versatile dish that you can add any vegetables or meats too. I usually make a frittata with cheese and broccoli because both of them compliment eggs really well.
Ingredients are pretty simple – 12 eggs, 2 cups of broccoli florets, 5-6 cheese slices, salt & pepper and milk. Milk is an optional ingredient, but I find it makes the frittata extra soft and moist.
First, roast your broccoli for 5 minutes in the oven and then once slightly roasted, take out and let cool. Then whisk your eggs, milk, roasted broccoli and salt & pepper together in a bowl. Brush oil on the pan and pour half of the egg mixture in. Then place cheese slices on top of your mixture. Pour the remaining egg mixture on top of the cheese and bake it for about 10 minutes, until the egg is properly cooked.
If you don’t have an oven, no problem. You can easily cook frittatas on a stove top. You have to cook them for 6 minutes on low heat with a lid. Then flip it and cook for another 6 minutes, until it is ready. To flip the frittata, take a plate, and place the pan upside down over the plate. Then slide the frittata back into the pan again.
